Here
is a simple yet elegant dinner to repair.
Salmon with Dill Butter Sauce
½
# salmon Fillet per person
1 c dry vermouth
fresh parsley
Sauce
2 T lemon
Juice
2 egg yolks
1 stick butter
fresh dill
Put salmon
in glass dish and pour wine over, pat with butter if desired
and put parsley on top. Put saran wrap ove pan and microwave
on high for 5 minutes.
For Sauce
Mix egg
yolks and lemon juice.
Heat slowly and add butter 1 T at a time. Add 1 c chopped fresh
dill, serve over salmon
Roasted Garlic and Rosemary Potatoes
3 Potatoes
2 - 3 T Olive Oil
1/2 t salt
1/4 t fresh pepper
2 cloves garlic, chopped
1 t dried rosemary
Combine all ingredients in a bowl and toss to count.
Spread on a baking sheet and place in a 375~ oven for 45 minutes.
Stir potatoes every 15 minutes to cook evenly.
Steamed Broccoli
1 Bunch of Broccoli
1 T water
dash salt and pepper
Cut broccoli crowns into bite size pieces, Discard Stems.
Put All ingredients into a ziplock bag or into a bowl covered
with plastic wrap. Microwave on high for 1 to 2 minutes or until
desired doneness is reached
I really like
to have fresh bread or rolls with this meal. My Aunt also serves
a simple Spinach salad with it:
Spinach Salad
2 cups Baby Spinach
1 Pear, diced
2 T Toasted Pecans
3 Strawberries diced.
For the Dressing
1 T Olive Oil
1 T Maple Syrup
1 T Balsalmic Vinegar
Toss All but the Dressing in a Salad Bowl or arrange on plates
Whisk together the dressing ingredients and drizzle over salads
A Good Chardonnay or Pinot Grigio goes great with this meal.

Valentines
Day is about making memories and spending quality time with
your sweetie, so I suggest utilizing as many ready made products
as possible to
make your evening spectacular. Why not pick a theme of sorts
to plan your meal around? Finger foods are great! Not only are
they light,(who wants to be weighed down when there's the possibility
of post dinner snuggling?!) but
they are tailor made for feeding each other romantic nibbles.
Why not
go for an Asian theme? You could start the evening with roasted
edamame, sprinkled
with wasabi powder for those who like it hot, perhaps? Enjoy
a glass of crisp california chardonnay to help balance the level
of spice. Then, move
on to an array of bite size and beautiful sushi (there's plenty
on sushi menus for vegetarians to chose from as well!), elegantly
plated on your own china. Splurge a little and purchase a saki
set to enojy an authentic sake experience with your meal!
Sake has a slightly sweet taste and can be enjoyed either ice
cold or slightly warmed, it simply depends on your preferences.
For dessert
I would suggest two choices, fortune cookies with romantic "fortunes"
(guaranteed good luck!) and a decadent and popular finale of
chocolate dipped
strawberries. You can find these luscious fruits dipped in everything
from milk chocolate to dark to chocolate caramel - and after
all, chocolate IS considered an aphrodisiac! To wash down these
sinful sweets, I would sugegst a glass of good quality champagne,
something not too sweet so as to help keep your palate from
becoming overwhelmed by your dessert. If you end your meal on
such a sparkly note, it can only bring good cheer! Don't forget
your
surroundings when dining at home. This means no dirty dishes
in the sink, piles of life's necessary papers (and we all have
them!) relegated behind a
closed door, plenty of candle light and low lighting, and music
that speaks to YOUR inner romantic.
